Ironman and Triathlon Recipes – Pasta bake

As the summer starts to draw to a close in the southern hemisphere we serve up a dish that is quick and simple to make yet healthy, high in carbohydrates, and will bring a satisfying warmth to you after a hard training session.


Pasta Bake
(Serves 4)

• 2 chicken breasts, grilled
• 3 cups cooked pasta
• 2 cups pumpkin, cooked and cut into firm cubes
• 1 cup frozen peas, cooked
• 1 cup frozen corn, cooked
• 1 cup broccoli, cooked
• 3/4 jar tomato pasta sauce
• Â½ cup light grated cheese

1) Preheat oven to 180C.
2) Place all vegetables and chicken into a deep, round cake tin. Mix Dolmio sauce through mixture and sprinkle top with cheese.
3) Bake until heated through.
