Coconut Bites: Nutritious, Portable Training Snack

These delicious bites of goodness hit 10/10 on the easy scale. 5 ingredients. 5 minutes to make. They’re perfect for on the bike – good fats and some sweetness. They are also handy for when you’re on the run or as a treat with a cup of tea.

Coconut Bites

  • 1/4 cup desiccated coconut
  • 3/4 cup dried dates (chopped)
  • 1 cup raw almonds
  • 1 tbsp water (approx.)
  • 1/2 cup cocoa

Combine coconut, dates, almonds and water in a food processor.

Pulse until mixture is crumbly and sticks together with your fingers.

Add more water if mixture isn’t sticking.

Roll mixture into balls then roll into cocoa or coconut.

Place in air tight container and store in fridge.
