Variety is the spice of life, thus The Wholesome Athlete has brought back into our kitchen a fruit that most of us likely don’t pay much attention to. Prunes get such a bad wrap – maybe it’s because they’re black, shriveled and slimy but in any case, they’re really good for you. These are high in Vitamin A, K, B and Potassium.
Prune Powerballs
- 1 cup pitted soft prunes
- 1 cup finely chopped walnuts
- 1/4 cup dried raisins
- 1/4 cup raw cacao powder
- 1/4 tsp ground cinnamon
- 1/2 cup dessicated coconut
Optional
- 1/4 tsp cayenne pepper
Combine chopped prunes, nuts, fruit, cacao and cinnamon in your food processor and pulse until combined.
Roll the mixture into little balls and roll on a plate of desiccated coconut to coat them.
Store them in the fridge.
These powerballs are the perfect long ride nutrition, post training recovery snack, or just a great portable, healthy treat to pack for lunch.
