Coconut’s are the latest craze today with fresh coconut’s becoming a more common sight than a coffee cup at the local farmers markets. We love all things coconut and with the sweetness of dates and earthy cashew nuts, these bars are dreamy! These bars only take a couple of minutes to prepare but you’ll have to be patient while they set.
Coconut Dream Bars
- 1 cup cashews
- 3/4 cup shredded coconut
- 14 medjool dates
- 2 tbsp coconut oil, softened
- 2 tbsp water, approx.
Line a slice tin with baking paper.
Mix cashews and coconut in food processor until they’re fine.
Add dates, softened oil and enough water to form a dough.
Press mixture into the tin firmly and place in the fridge to set.
Turn the mixture out and cut using a hot knife.
Wrap individually or store in an airtight container. Store in the fridge or freeze for later use and the trickiest things will be not eating them too fast.
