Chai Spiced Pumpkin Loaf

Spices are both tasty and nutritious, and are great in both savoury cooking and sweet baking. Make the chai spice mixture and use it in pancake batters, cookies and smoothies.

Chai Spiced Pumpkin Loaf

  • 1/2 cup brown rice flour
  • 1/2 cup pea protein powder
  • 1/2 cup almond meal
  • 1/2 tsp baking powder
  • 3 tsp chai spice
  • 1/2 tsp salt
  • 1 cup pumpkin (cooked and mashed)
  • 1/3 cup coconut oil (melted)
  • 1/2 cup maple syrup (or rice malt syrup)
  • 1 tsp vanilla essence
  • 2 eggs (or chia seeds if vegan)
  • 1/2 cup orange juice
  • 1/4 cup pecans (chopped)
  • 1/4 cup hazelnuts (chopped)
  • 1 tbs orange zest
  1. Stir the dry ingredients together in a bowl large mixing bowl.

  2. Whisk together the pumpkin, oil, syrup, vanilla, eggs and orange juice in a separate mixing bowl then add to the dry mixture.

  3. Add nuts and zest to mixture and stir until smooth.

  4. Pour the batter in to a greased loaf tin and bake in 175C for approx. 60 minutes or until a skewer inserted in the middle comes out clean.

  5. Serve warm with your choice of spreads or toppings.

You can add some chopped Pepitas to your Hazelnuts for some extra variety.
