Ginger Ninja Bars – Gluten, dairy, sugar free and paleo!

For all the ginger lovers out there, this recipe is especially for you. Whether it be grated into stir fries, pickled with sushi, fresh in your morning cup of tea, or powdered in baking; ginger is so versatile and good for you.

Ginger is a powerful weapon against inflammation and is packed full of immunity boosting goodness to fight off infection and viruses.

So if you’re a ginger lover too, or are perhaps intrigued by it’s use in a healthy, sweet snack, you must try these Ginger Ninja bars. You can adjust the amount of ginger to your liking through your own trial and error.

Ginger Ninja Bars

  • 3 cup dates, roughly chopped
  • 1 cup pecans
  • 1 cup almonds
  • 2 tbsp ground ginger
  • 1/4 tsp salt
  • 1/2 cup raisins

Soak dates in boiling water for 15 min and drain.

Place dates, pecans, almonds, ginger and salt in food processor and blend until mixture combines.

Remove mixture from food processor and combine raisins.

Place mixture into a baking tin lined with baking paper/greaseproof paper and allow to harden in the fridge for a few hours.

Tip: A reader suggested dusting the bars with some coconut flour before individually wrapping them for long rides. This prevents them from sticking, particularly in warmer climates.
